So I looked this up.
All unripe bell peppers begin as green on the plant. The color of bell peppers changes from green to yellow, orange, and red the longer it is allowed to mature on the plant. Green peppers feature a more bitter flavor profile. Orange and yellow bell peppers are sweeter, with the sweetest being the red bell pepper.

I don't mind green bell peppers. I prefer red but I'm too cheap to pay the extra money for them. I find it ridiculous that stores charge more for the other colors of bell peppers than they do the green ones.

But, usually green is fine although sometimes i want colored peppers for certain dishes. So i still buy them but i buy green more often.

For some reason green ones bother my stomach but the others don't. And yeah it's all the same pepper at different stages in growth...

things like peppers and onions always give me a certain amount of indigestion... but i LIKE them so will put up with the temporary disruption. that's what tums are for.

Certain food do NOT like me but I like them so I eat them and deal with it. Same. Chicken fried steak is one of those items for me. Really, anything fried. My stomach hates me after I eat fried foods. It's a good thing I don't like fried food much.

My son prefers green and they last longer in the fridge so that's what I usually buy. When I grow them, critters or something eat them if I leave them on the plant too long. Same with tomatoes. I pick when green and ripen them in my garden window.

I pick when green and ripen them in my garden window. it makes me crazy when critters think i've opened a free salad bar! I really don't begrudge them their snacks BUT... just pick ONE tomato and eat the whole thing... don't take a bite out of 4-5 of them . on pepper colors. I know that GREEN bell peppers will eventually become red ones. pretty sure that goes for all green peppers... even the hot ones. for some reason I don't think those yellow, orange, purple, etc. bell pepper start out as green??
