We like the big fox squirrels, rear haunches like chicken thighs ! Squirrels are very greasy but if made right can be tasty!Have you ever had fried frog's legs and real turtle soup? Turtle yes, frogs no.

We have alligator snappers all over the place.
Up to 180 lbs.
Had a 100 pounder in the pond by our house 20 years ago.

There is a French bistro in DC on the Hill that serves frog legs that are pretty tasty. Not a lot of meat on them, however. I've seen turtle soup on various menus but have never ordered it. I think it's made with snapper turtles. Those things are nasty. Try Bookbinder's snapper soup. had a grilled plate at Sweetwater Casino (in NJ) that had a piece of "green turtle steak" in the mix. mild & kinda reminded me of veal.

Never had turtle or frog, that I'm aware of.
I have had pigeon. Found out after consuming the dish. Can't say I was happy to learn that fact but it was good and I would eat it again. I've also had alligator and ostrich. I think that does it for the uncommon meats.

my dad worked with a guy who was a hunter. he came home one day with a few lbs of ground bear meat. seem to recall making a meatloaf with it but no real memory of how it tasted. i can find ground bison in shoprite on a regular basis. back in 70's, someone in my area was raising beefalo". cattleinternationalseries.weebly.com/uploads/1/6/5/8/16581252/photo.jpg?539think it was around the same time that ostrich was gonna become the new beef. a buffalo/bison is one BIG critter!

Just a note of interest.
We had a ranch that raised bison for market/sale about a mile north of me. Sadly it's been gone and switched over to beef cattle about 5 years ago.
No around here has bison any more as they sold to all the local stores except Wal-Mart.
Unless something changes, probably won't be getting that for now.

I've had wild boar. I was having dinner with a family in Japan. The father liked preparing unusual dishes to try to freak out the Americans. I thought it was good and had several helpings. He said he cooked it in sake to remove the gamey taste. He actually had gone out and killed it himself.

When we visited the National Parks, I think it was in the North Rim (Grand Canyon), the restaurant served bison stew. My son ate it every night. He loved it.
